Sugar-free Coconut Flour Cookie

½ cup melted butter

2/3 cup coconut flour

¼ cup powdered stevia

4 eggs

2 teaspoons vanilla extract

½ teaspoon salt

 

Method

Preheat oven to 160o  C fan-forced and line a large cookie tray with baking paper.

In a large bowl mix all ingredients together and let stand for five minutes to allow the coconut flour to absorb the liquids and thicken.
Roll large teaspoons full of the mixture and place on the cookie tray.
Flatten the cookie mixture prior to baking as these coconut flour cookies will not spread during cooking.  Cook for approximately 20 minutes or until golden brown.
Remove from the oven and let cool on the tray for five minutes before transferring to a wire rack to cool completely.
Store in an airtight container in the freezer.
Makes approximately 16-18 cookies (85 calories each).
