Savoury Mince with Noodles

1 packet Quorn vegetarian mince, defrosted

2 sticks celery. sliced

4 spring onions, sliced

1/4 cup frozen peas (or fresh beans, sliced)

1 teaspoon ghee or coconut oil

1/2 chicken stock cube

1 teaspoon vegemite

1 heaped tablespoon gravy powder

1/2-1 cup water

2 packets Chang’s Super Low-Cal noodles (or Slendier noodles)




Heat ghee in a large frypan on medium heat and cook celery for a few minutes until softened.  Add spring onion and cook for an additional 2-3 minutes before adding the peas and Quorn mince.  Reduce heat and add the stock cube, vegemite and gravy powder.  Stir gently to combine and gradually add the water until a desired consistency is achieved.  Prepare noodles according to packet directions and add to the mince mixture.  Allow to heat through and serve.  4 Servings (102 calories per serve).
