Paleo Lemon Pie

Ingredients

Base

1.5 cups desiccated coconut

3/4 cup pitted dates

1/2 cup raw cashews

Filling

2 cups raw cashews

zest and juice of 2-3 lemons

1 cup desiccated coconut

2 tablespoons stevia granules (or 1/4 cup rice malt syrup)

3 tablespoons coconut cream (or regular thickened  dairy cream)

1/2 teaspoon vanilla extract

good pinch of salt

 

Method

Place the ingredients for the base into a food processor and blend until it resembles breadcrumbs.

Then press into a lined spring form pan and refrigerate to set while making the filling.

Place the ingredients for the filling into a food processor and blend until smooth and creamy (will be very thick).

Spoon filling onto base and smooth the surface.

Refrigerate until set.

Serves 12 (279 calories/serve)
