Ever feel like a sweet snack that isn’t loaded with sugars and bad fats? Want to make something in under ten minutes and be eating it before your favourite show finishes?  Then this low carb snack has your name all over it!  Made with dark chocolate, rich in antioxidants, and with coconut and almonds which are packed full of healthy fats and fibre.  Plus, it contains the added sweetness of cherry flavoured stevia….What more could you ask for?










100g 90% cocoa chocolate (I use Lindt brand)

¼ cup desiccated coconut

½ cup flaked or slivered almonds

20 drops cherry flavoured stevia



Line a small, shallow tray with baking paper.  Melt the chocolate in a microwave-safe bowl or jug on medium power for about two minutes, stopping and stirring the chocolate every thirty seconds, until smooth.  Add remaining ingredients to the melted chocolate and stir until well combined.  Spoon mixture onto the lined tray and spread out evenly until about 3mm thick.  Chill in the refrigerator for about one hour.  Remove and break into bite-sized pieces.  Store in an airtight container in the fridge.
