Kidney Bean Brownie


Kidney Bean Brownie (Gluten Free)

1 can red kidney beans, drained, rinsed and either blended in a food processor or pushed through a sieve
2 eggs, lightly beaten
3 tablespoons butter, melted
¼ cup + 1 tbspn cocoa powder
½ cup splenda or other spoon for spoon sugar alternative
1 tspn vanilla extract
½ tspn baking powder

Mix all ingredients together in a bowl and transfer to a square brownie tray that is greased and lined with baking paper. Bake at 160oC for 18-20 minutes or until set in the centre. Cool on a wire rack and cut into squares when cold. Makes 16 pieces at 63 calories each.
