Green Bean and Almond Quinoa Salad

20130706_1206442 cups of cooked quinoa (cooked using stock for extra flavour)

750g green beans, topped and tailed and cut into 5cm pieces

½ cup sliced almonds (dry toasted in frypan)

Juice of 1 lemon

1 tspn almond extract

Salt and pepper to taste


Microwave the beans until just tender.  Toss all ingredients together in a mixing bowl and transfer  to a salad bowl to serve.  Serve warm or cold as a side dish.
