Chinese Chicken Loaf

Ingredients

1kg chicken mince

3/4-1 cup gluten free bread crumbs

1/2 white onion, diced

3 spring onions, chopped

2 free range eggs

2 (or 3) teaspoons Chinese five spice powder

2 teaspoons Vegeta powdered seasoning

1/4 cup oyster sauce

 

Method

Preheat oven to 160oC (fan forced).  Line a loaf tin with baking paper and grease with a little ghee or coconut oil.

In a large bowl, mix all ingredients until well combined.  Transfer to loaf tin, smoothing the top, and bake for approximately 50 mins or until a skewer, inserted in the centre of the loaf, releases clear juices.  Remove from oven and allow the loaf to rest for about 10 mins before removing from loaf tin.  Cut into 10 slices.  This loaf is suitable to freeze and tastes great eaten alone or with a side salad.  Each slice contains about 200 calories.
