Baked Protein Cheesecake

Ingredients
1/3 cup almond meal
250g cottage cheesecheesecake ¼ cup vanilla protein powder (low carb)
1 tspn vanilla essence
1 egg plus 1 egg white
2 tablespoons SR flour
6 Equal tablets (crushed)

 

Line a 20cm springform pan with baking paper and press the almond meal into the base.

Using an electric mixer, blend the cottage cheese until smooth, then add the egg, egg white and vanilla
essence.
Stir in the protein powder, flour and Equal tablets.
Pour over the almond meal.
Bake in the oven at 170 degrees Celsius for about 25 mins or until the middle is still a little bit wobbly when the pan is jiggled.
Chill in the fridge for several hours before serving.

Serves 8 (each serve has less than 100 calories and packed full of protein!).
